Recipes for quick, healthy eating

As we all know, being a college student isn’t the cheapest thing in the world. Between juggling hectic work and school schedules while fitting in time for extra activities, eating healthy may be the last thing on anyone’s mind.

It may be easier to eat at the café or grab fast food in between classes, but in all the rushing, many skip breakfast or lunch, which leaves them hungrier and craving junk food. Many people think “time consuming” when they hear the words “healthy cooking,” but that’s just not true. I have created a short list of quick and healthy recipes you can make right in your dorm.

Spring Ramen Salad

You will need:

  • 1 Pack of chicken sesame Ramen noodles
  • 1 ½ tablespoons of lemon juice
  • 1/6 cup of salad oil
  • 1 tsp. of sugar
  • 1/2 cups of red or seedless grapes cut in half
  • ¼ cup pineapple (diced)
  • 1 ½ tablespoons chives OR green onions
  • a few turkey strips (pre-cooked and only needs to be heated/warmed)
  • 1/8 cup of walnut pieces

Directions

  1.   Cook noodles according to package directions and then drain
  2. Rinse noodles off in cold water and add the sesame oil (came from package)
  3. Put noodles in the refrigerator
  4. For your dressing: mix the lemon juice, oil, seasoning packet, and sugar in a bowl
  5. Take noodles out of the refrigerator and combine the noodles, grapes, dressing, walnuts, and turkey strips

Bagel Pizza

You will need:

  • 1 Bagel (any flavor; plain recommended)
  • 1 can of pizza sauce
  • 1 package of shredded cheese
  • Additional toppings (pepperoni, olives, pepper, etc.)

Directions:

  1. Cut bagel into ½ (toast if preferred)
  2. Add pizza sauce, cheese, and additional toppings on
  3. Microwave for 30 seconds  

Quick microwave scrambled eggs

You will need:

  • 3 tsp. of milk
  • Salt and pepper
  • 1 onion (diced)
  • 4 eggs

Directions:

  1. Crack and beat 4 eggs very well into bowl
  2. Stir in diced onion
  3. Gradually add milk and salt and pepper
  4. Place in microwave and heat on high for 2 minutes
  5. Take eggs out and stir
  6. Cook eggs for an additional 1 ½ to 2 minutes on high

Quick Snack Mix

You will need:

  • Glass microwaveable bowl
  • 2 packages of Ranch dressing mix
  • Wax paper
  • ½ cup vegetable oil
  • 3 cups of oatmeal cereal squares (Quaker Oats recommended)
  • 3 cups of corn/rice cereal (any kind)
  • 2 cups pretzel sticks
  • 1 cup dried cherries
  • 1 cup of chocolate pieces

Directions:

  1. Mix ranch dressing packet and ½ vegetable oil in glass bowl
  2. Stir in cereal squares, corn cereal, and pretzels
  3. Microwave on high for 2 minutes, take out and stir, then microwave on high for additional 2 minutes
  4. Spread on single sheet of wax paper and cool for 30 minutes
  5. Add cherries and chocolate pieces in cooled spread
